Wine Production Process

    Harvesting

    Carefully hand-harvest Picolit grapes when they are fully ripe, usually in late September to early October.

    Drying

    Spread harvested grapes in a single layer on drying racks or in well-ventilated rooms to allow them to dry for several weeks, concentrating their sugars.

    Pressing

    After drying, gently press the grapes to extract the juice. Ensure minimal exposure to skins to retain the delicate flavors.

    Fermentation

    Transfer the juice to fermentation tanks and add selected yeast strains. Allow to ferment at controlled temperatures until the desired sweetness and alcohol levels are achieved.

    Aging

    Age the wine in oak barrels for a minimum of 12 months to develop complexity and character.

    Bottling

    Once aged, filter and bottle the wine. Seal with a cork and label appropriately, indicating the vintage (2003) and winery (Tenuta S.Anna).
