Method

Directions

  1. 1

    Harvest and Prepare Grapes

Select and harvest ripe Picolit grapes. Remove any stems and leaves, and wash the grapes thoroughly.

  2. 2

    Crush Grapes

Crush the grapes in a clean fermentation vessel to release their juice. You can use a grape crusher or your hands for this step.

  3. 3

    Add Water and Sugar

Add 500 ml of water and 200 g of sugar to the crushed grape mixture. Stir well to dissolve the sugar.

  4. 4

    Add Yeast

Sprinkle the yeast over the mixture and stir gently. This will initiate the fermentation process.

  5. 5

    Fermentation

Cover the fermentation vessel with a clean cloth and let it sit at room temperature for about 2 weeks. Stir the mixture daily to ensure proper fermentation.

  6. 6

    Strain and Bottle

After fermentation is complete, strain the liquid through a fine mesh or cheesecloth into a clean bottle. If desired, add sulfur dioxide to preserve the wine.

  7. 7

    Age the Wine

Seal the bottle and store it in a cool, dark place for at least 6 months to allow the flavors to develop.

  8. 8

    Serve

After aging, chill the wine and serve it in small glasses to enjoy its unique flavor.
