    Prepare the Duck

    Score the skin of the duck breast in a crisscross pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

    Sear the Duck

    In a large skillet, heat olive oil over medium-high heat. Place duck breasts skin-side down in the skillet and sear for about 6-8 minutes until the skin is crispy and golden. Flip and cook for an additional 4-5 minutes. Remove from the skillet and let rest.

    Make the Porto Reduction

    In the same skillet, add Porto wine and scrape up any browned bits from the bottom. Bring to a simmer and let it reduce by half, about 5-7 minutes.

    Add Blueberries

    Add the fresh blueberries to the Porto reduction and cook for another 2-3 minutes until the blueberries soften slightly.

    Plate the Dish

    Slice the duck breast thinly and arrange on plates. Spoon the blueberry-Porto sauce over the duck and garnish with fresh mint leaves.
