Cooking Instructions

  1. 1

    Cook the Penne

Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

  2. 2

    Prepare the Bacon and Vegetables

In a large skillet, heat the olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon and set aside, leaving the grease in the skillet.

  3. 3

    Sauté the Vegetables

In the same skillet, add the sliced mushrooms and cook until softened. Add the grape tomatoes and peas, cooking for an additional 2-3 minutes.

  4. 4

    Cook the Seafood

Add the shrimp and sea scallops to the skillet. Cook until the shrimp turn pink and the scallops are opaque, about 3-4 minutes.

  5. 5

    Make the Spicy Rose'Rum Sauce

Pour the rum into the skillet and let it cook for about 2 minutes to burn off some alcohol. Then add the heavy cream and crushed red pepper flakes, stirring to combine. Let the sauce simmer for 5 minutes.

  6. 6

    Combine Everything

Add the cooked penne and crispy bacon back to the skillet. Toss everything together until the pasta is well coated with the sauce. Season with salt and black pepper to taste.

  7. 7

    Serve

Garnish with chopped parsley and serve immediately.
