Harvest ripe Malvasia grapes and air-dry them in a well-ventilated, shaded area for about two weeks until they reach the desired sugar concentration.

Once dried, crush the grapes to extract the juice. You can use a traditional grape press or a clean stomping method.

In a fermentation vessel, combine the grape juice with the water and add the yeast. Stir gently and cover with a cloth. Allow it to ferment for about 10-14 days at room temperature.
