    Prepare the Gelatin

    In a small bowl, sprinkle the gelatin powder over the water and let it sit for about 5 minutes to bloom.

    Heat the Cream and Milk

    In a saucepan, combine the heavy cream, milk, sugar, and salt. Heat over medium heat until the mixture is hot but not boiling. Stir in the vanilla extract, cinnamon, ginger, and nutmeg.

    Add the Gelatin

    Remove the saucepan from the heat and stir in the bloomed gelatin until completely dissolved.

    Pour into Molds

    Pour the mixture into individual serving molds or cups. Allow to cool to room temperature, then cover and refrigerate for at least 4 hours or until set.

    Prepare the Berry Topping

    While the panna cotta is setting, wash and prepare mixed wild berries. You can use strawberries, blueberries, raspberries, and blackberries. Toss them together and add a sprinkle of sugar if desired.

    Serve

    Once the panna cotta is set, carefully unmold and serve with the mixed wild berries on top.
