Oven-baked, fresh Blue Point Oysters, topped with sautéed spinach, Italian pancetta and Sambuca-flavored cream cheese (half dozen)

Prepare the Oysters
Preheat your oven to 400°F (200°C). Carefully shuck the oysters and place them on a baking sheet.

Cook the Pancetta and Spinach
In a skillet over medium heat, add the olive oil and pancetta. Cook until the pancetta is crispy. Add the minced garlic and cook for an additional minute. Then, add the fresh spinach and sauté until wilted. Remove from heat.

Make the Cream Cheese Mixture
In a bowl, combine the cream cheese, Sambuca, and half of the grated Parmesan cheese. Mix until smooth. Add the sautéed spinach and pancetta mixture to the cream cheese and stir until well combined. Season with salt and black pepper to taste.

Assemble the Oysters
Spoon the cream cheese mixture generously over each shucked oyster on the baking sheet. Sprinkle the remaining Parmesan cheese on top.

Bake the Oysters
Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is bubbly and golden.
