    Prepare the Mozzarella

    In a saucepan, heat the milk over medium heat until it reaches 190°F (88°C). Stir occasionally to prevent scorching. Remove from heat.

    Add Vinegar

    Add the white vinegar and salt to the hot milk. Stir gently for about 1 minute until curds form. Let it sit for 5 minutes.

    Drain Curds

    Using a slotted spoon, transfer the curds to a bowl. Pour ice water over the curds to cool them down. Let them sit for 5-10 minutes.

    Knead the Mozzarella

    Once cooled, knead the curds gently with your hands until they become smooth and elastic. Shape into a ball and place in a bowl with salted ice water.

    Prepare the Tomatoes

    Wash and slice the organic tomatoes. Arrange them on a serving plate.

    Assemble the Dish

    Tear the fresh basil leaves and scatter them over the sliced tomatoes. Season with salt and freshly ground black pepper.
