    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler method) until smooth. Remove from heat and let it cool slightly.

    Whisk the Egg Yolks

    In a separate bowl, whisk the egg yolks with half of the granulated sugar until the mixture is pale and creamy.

    Combine Chocolate and Yolks

    Slowly add the melted chocolate to the egg yolk mixture, stirring continuously until well combined. Add vanilla extract and a pinch of salt.

    Whip the Egg Whites

    In a clean bowl, beat the egg whites until soft peaks form. Gradually add the remaining sugar and continue whipping until stiff peaks form.

    Fold in Egg Whites

    Gently fold the whipped egg whites into the chocolate mixture in three additions, being careful not to deflate the mixture.

    Whip the Cream

    In another bowl, whip the heavy cream until soft peaks form. Fold the whipped cream into the chocolate mixture until well incorporated.

    Chill the Mousse

    Divide the mousse into serving dishes or glasses. Cover and refrigerate for at least 2 hours or until set.
