Linguine All’Astice Fradiavolo

Method

Cooking Instructions

  1. 1

    Prepare the Lobster

Bring a large pot of salted water to a boil. Add the lobster and cook for about 8-10 minutes until bright red. Remove the lobster, let it cool, and then crack the shell to remove the meat. Cut the meat into large chunks and set aside.

  2. 2

    Cook the Linguine

In the same pot of boiling water, add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

  3. 3

    Sauté the Ingredients

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and red hot pepper flakes, sauté for about 1 minute until fragrant. Add the grape tomatoes and cook for about 3-4 minutes until they start to soften.

  4. 4

    Combine the Lobster and Sauce

Pour in the white wine and bring to a simmer. Add the lobster meat and fresh basil, cooking for another 2-3 minutes. If the sauce is too thick, add some reserved pasta water to reach desired consistency.

  5. 5

    Mix with Linguine

Add the cooked linguine to the skillet, tossing to coat the pasta in the sauce. Season with salt and black pepper to taste.

  6. 6

    Serve

Serve immediately, garnished with additional fresh basil if desired.
