    Prepare the Wild Boar Ragout

    In a large skillet, heat olive oil over medium heat. Add chopped onion, garlic, carrot, and celery. Sauté until soft. Add wild boar meat and brown it. Pour in red wine and let it simmer until reduced. Add crushed tomatoes, salt, and pepper. Cook for about 30 minutes until thickened.

    Make the Bechamel Sauce

    In a saucepan, melt butter over medium heat. Stir in flour and cook for 2 minutes. Gradually whisk in milk and bring to a simmer, stirring constantly until thickened. Season with nutmeg, salt, and pepper.

    Assemble the Lasagna

    Preheat the oven to 180°C (350°F). In a baking dish, spread a layer of ragout at the bottom. Place lasagna noodles over the ragout. Add a layer of bechamel sauce, then sprinkle with provolone cheese. Repeat the layers until all ingredients are used, finishing with a layer of bechamel and cheese on top.

    Bake the Lasagna

    Cover the baking dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 15 minutes until the top is golden and bubbly. Let it cool slightly before serving.
