    Make the Gnocchi

    Boil the potatoes until tender. Peel and mash them. Allow to cool slightly.

    In a bowl, combine the mashed potatoes, flour, egg, and salt. Mix until a soft dough forms.

    Divide the dough into small pieces and roll each piece into a rope about 1 cm thick. Cut into 2 cm pieces to form the gnocchi.

    Use a fork to press down each piece to create the classic gnocchi shape. Set aside.

    Prepare the Duck Ragù

    In a large pot, heat olive oil over medium heat. Add the chopped onion, carrot, and celery. Sauté until softened.

    Add the minced garlic and cook for 1 more minute.

    Add the duck legs, canned tomatoes, red wine, thyme, salt, and pepper. Bring to a simmer.

    Cover and cook on low heat for about 1.5 hours, until the duck is tender. Remove the duck, shred the meat, and return it to the sauce.

    Combine Gnocchi and Sauce

    Bring a large pot of salted water to a boil. Cook the gnocchi in batches, until they float to the surface, about 2-3 minutes.

    Drain the gnocchi and add them to the ragù. Toss gently to combine.

    Serve hot, garnished with freshly grated Parmesan cheese if desired.
