1. Prepare the Port Wine Reduction

In a saucepan over medium heat, add the Port wine and bring to a boil. Reduce to a simmer and let it reduce by half until thickened, about 15-20 minutes. Set aside.

2. Sauté the Mushrooms

In a skillet, heat the olive oil over medium-high heat. Add the sliced mushrooms, season with salt and pepper, and sauté until golden brown and tender, about 5-7 minutes. Set aside.

3. Grill the Beef Tenderloin

Preheat the grill to high heat. Season the beef tenderloin with salt and pepper. Grill for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from grill and let rest for a few minutes.

4. Assemble the Dish

Place the grilled beef tenderloin on a plate. Top each piece with a slice of pâté de foie gras, a generous spoonful of sautéed mushrooms, and drizzle with the Port wine reduction. Garnish with shaved black truffle.
