Prepare the Beef Tenderloin
Season the beef tenderloin with salt and black pepper. Heat 1 tablespoon of olive oil in a grill pan over medium-high heat. Sear the beef on all sides until it reaches your desired level of doneness (about 4-5 minutes per side for medium-rare). Remove from heat and let it rest.

Sauté Shallots
In the same pan, add the remaining tablespoon of olive oil. Add the minced shallots and sauté until they are translucent and fragrant, about 3-4 minutes.

Deglaze the Pan
Pour in the white wine and scrape up the browned bits from the bottom of the pan. Allow it to simmer for about 5 minutes until reduced by half.

Prepare Gorgonzola Sauce
Reduce the heat to low and add the Gorgonzola cheese to the pan, stirring until melted and smooth. Add the fresh herbs and mix well.

Serve
Slice the rested beef tenderloin and place it on a plate. Top with the Gorgonzola sauce and sautéed shallots. Serve immediately.
