Mousse Preparation

    Melt the Chocolate

    In a heatproof bowl, melt the dark chocolate over a pot of simmering water (double boiler) until smooth. Remove from heat and let it cool slightly.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.

    Prepare the Egg Mixture

    In another bowl, whisk the eggs with granulated sugar and a pinch of salt until the mixture is pale and slightly thickened.

    Combine Ingredients

    Gently fold the melted chocolate into the egg mixture, followed by the vanilla extract. Then, carefully fold in the whipped cream until fully combined.

    Chill the Mousse

    Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours, or until set.
