Prepare the Escarole
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the organic escarole and sauté until wilted, about 3-4 minutes. Stir in the golden raisins and cook for an additional 2 minutes. Season with salt and pepper to taste. Remove from skillet and set aside.

Plate the Dish
Place a bed of wilted escarole on each plate, top with the caramelized seabass fillet, sprinkle the toasted pine nuts over the top, and drizzle with fresh lemon juice.
