Grill the Zucchini
Preheat the grill to medium-high heat. Slice the zucchini into 1/4 inch thick rounds. Drizzle with olive oil, and season with salt and black pepper. Grill the zucchini for about 3-4 minutes on each side until they are tender and have grill marks. Remove from the grill and set aside.

Prepare the Roasted Peppers
If using jarred roasted red peppers, simply drain and slice them into strips. If roasting your own, grill or roast fresh red peppers until charred, then peel and slice.

Plate the Dish
On a serving platter, arrange the grilled zucchini and roasted red pepper strips. Add the Burrata in the center, allowing it to remain whole for presentation.

Add Prosciutto and Olives
Drape the slices of Prosciutto di Parma around the Burrata and vegetables. Scatter the Cerignola olives over the platter.

Drizzle and Serve
Finish by drizzling a little more olive oil over the entire dish and adjusting seasoning with salt and black pepper if needed. Serve immediately.
