Roast the Peppers
Preheat your oven to 200°C (400°F). Cut the bell peppers in half, remove the seeds and stems, and place them on a baking sheet. Drizzle with 2 tablespoons of olive oil and sprinkle with salt and pepper. Roast in the oven for about 20-25 minutes until the skins are blistered and charred. Remove from the oven and let cool.

Grill the Zucchini
While the peppers are roasting, slice the zucchini into thin rounds. Heat a grill pan over medium-high heat and drizzle with 1 tablespoon of olive oil. Grill the zucchini slices for 3-4 minutes on each side until they are tender and have grill marks. Season with salt and pepper.

Prepare the Salad
In a bowl, combine the cherry tomatoes, grilled zucchini, and roasted peppers (sliced into strips). Drizzle with the remaining 1 tablespoon of olive oil and balsamic vinegar. Toss gently to combine.

Assemble the Dish
On a serving plate, place the fresh burrata in the center. Surround it with the tomato, zucchini, and pepper salad. Garnish with fresh basil leaves.
