Roast the Vegetables
Preheat your oven to 400°F (200°C). Cut the sweet bell peppers into strips and the eggplant into cubes. Toss the vegetables with 2 tablespoons of olive oil, salt, and pepper. Spread them on a baking sheet.

Bake
Roast the vegetables in the oven for about 25-30 minutes or until they are tender and slightly caramelized. Stir halfway through for even cooking.

Prepare the Burrata
While the vegetables are roasting, take the burrata cheese out of the refrigerator to come to room temperature.

Assemble the Dish
Once the vegetables are done roasting, arrange them on a platter. Tear the burrata open and place it in the center. Drizzle with the remaining tablespoon of olive oil.

Garnish
Top with fresh basil leaves and, if desired, arrange slices of Parma prosciutto around the platter.
