    Sauté the Vegetables

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Add Eggplant and Peppers

    Add the diced eggplant and bell peppers to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender.

    Add Tomatoes and Season

    Stir in the diced tomatoes, chopped basil, salt, and black pepper. Cook for another 3-4 minutes until tomatoes are soft and mixture is well combined. Remove from heat and let cool.

    Prepare the Bruschetta Base

    Slice the bread of your choice (preferably a rustic Italian loaf) and toast until golden brown.

    Assemble the Bruschetta

    Top each slice of toasted bread with a generous spoonful of the caponata mixture.

    Serve with Parmigiano Reggiano

    Serve the bruschetta alongside a wheel of Parmigiano Reggiano for grating, and a side of mixed Mediterranean olives.
