    Prepare the Marinade

    In a bowl, mix together olive oil, lemon juice, minced garlic, chopped rosemary, salt, and black pepper.

    Marinate the Fish

    Place the whole Branzino in a large dish and pour the marinade over it. Ensure the fish is well coated, and let it marinate in the refrigerator for at least 30 minutes.

    Prepare the Potatoes

    Preheat your oven to 200°C (400°F). Wash and cut the potatoes into wedges, then toss them with olive oil, salt, and pepper. Spread them out on a baking tray.

    Bake the Potatoes

    Put the baking tray with potatoes in the oven and bake for about 20 minutes.

    Prepare the Vegetables

    While the potatoes are baking, wash and chop the mixed vegetables. Toss them with olive oil, salt, and pepper.

    Add the Fish and Vegetables

    After 20 minutes, remove the potatoes from the oven, stir them, and then place the marinated Branzino and mixed vegetables on the same tray. Return to the oven.

    Bake Everything Together

    Bake for an additional 25-30 minutes or until the fish is cooked through and flakes easily with a fork.

    Serve

    Remove the baking tray from the oven and let it cool for a few minutes. Serve the Branzino with the roasted potatoes and vegetables.
