Preheat your oven to 400°F (200°C).

Prepare the Spinach Mixture
In a large skillet, melt the butter over medium heat. Add the minced garlic and shallot, cooking until fragrant. Stir in the fresh spinach and cook until wilted. Remove from heat.

Combine Ingredients
In a bowl, mix the cooked spinach with cream, half of the Parmesan cheese, nutmeg, salt, and pepper until well combined.

Prepare the Oysters
Shuck the oysters and place them on a baking sheet. Spoon the spinach mixture onto each oyster.

Add Topping
In a small bowl, combine the breadcrumbs, remaining Parmesan cheese, and chopped parsley. Sprinkle this mixture generously over each oyster.
