Prepare the Grilled Pineapple
Preheat a grill or grill pan over medium heat. Cut the pineapple into thick slices and brush both sides with olive oil. Grill the pineapple slices for about 3-4 minutes on each side until grill marks appear and the fruit is slightly caramelized. Remove from the grill and let cool.

Arrange the Antipasto Platter
On a large serving platter, arrange the sliced Parma prosciutto, porchetta, and soppressata in an overlapping pattern. Cut the pecorino cheese into thin slices or cubes and add them to the platter.

Add Olives and Grilled Pineapple
Scatter the mixed Mediterranean olives around the meats and cheese. Finally, add the grilled pineapple slices to the platter for a sweet and savory contrast.

Drizzle the balsamic vinegar over the antipasto platter and sprinkle with salt and freshly cracked black pepper to taste.
