Prepare the Filling
In a large skillet, sauté the fresh spinach over medium heat until wilted. Allow to cool, then chop finely. In a bowl, mix the chopped spinach with ricotta, grated Parmesan, salt, pepper, and nutmeg.

Make the Pasta Dough
In a large bowl, combine 2 cups of all-purpose flour and 3 large eggs. Knead the dough for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.

Roll Out the Dough
Divide the dough into quarters. Roll out each piece into thin sheets using a pasta machine or rolling pin.

Fill the Agnolotti
Place small spoonfuls of the filling onto the pasta sheets, spacing them about 2 inches apart. Fold the pasta over and press down around the filling to seal. Cut into individual agnolotti shapes.
