Veggie Patty

Bun and Toppings

Method

Prepare the Veggie Patty

  1. 1

    Mash the Beans

In a large bowl, mash the black beans with a fork or potato masher until mostly smooth, leaving some chunks for texture.

  2. 2

    Mix Ingredients

Add cooked quinoa, grated carrot, chopped onion, minced garlic, ground cumin, chili powder, salt, black pepper, and the egg to the mashed beans. Mix well until all ingredients are evenly combined.

  3. 3

    Add Bread Crumbs

Gradually add the bread crumbs to the mixture until it holds together well. You may need more or less depending on the moisture content.

  4. 4

    Form Patties

Divide the mixture into four equal portions and form them into patties, about 1/2 inch thick.

  5. 5

    Cook the Patties

Heat olive oil in a skillet over medium heat. Once hot, add the patties and cook for 4-5 minutes on each side, or until golden brown and heated through.

Assemble the Burger

  1. 6

    Toast the Buns

If desired, toast the whole wheat burger buns on a skillet or in a toaster until golden brown.

  2. 7

    Layer the Toppings

On the bottom half of each bun, place a lettuce leaf, followed by a veggie patty, a slice of tomato, and avocado.

  3. 8

    Add Condiments

Drizzle ketchup and mustard on top to taste, then close the burger with the top half of the bun.

  4. 9

    Serve

Serve the veggie burgers warm with additional toppings or sides as desired.
