Fit Turkey Wrap

In a large brew kettle, combine the Pale Malt and Crystal Malt with 5 gallons of filtered water. Heat the mixture to 152°F (67°C) and maintain this temperature for 60 minutes. This process will convert the starches in the malt into fermentable sugars.

Mash Process

After the mash is complete, sparge (rinse) the grains with additional hot water (around 170°F or 77°C) to extract more sugars. Collect the wort (unfermented beer) in your brew kettle.

Sparging

Bring the wort to a boil and add the Cascade Hops. Boil for 60 minutes, adding the Centennial Hops with 15 minutes left in the boiling process.

After the boil, cool the wort quickly to around 68°F (20°C) using a wort chiller or an ice bath.

Cool the Wort

Transfer the cooled wort to a sanitized fermentation vessel and pitch the American Ale Yeast. Seal the vessel with an airlock and allow it to ferment at room temperature for 1-2 weeks.

Fermentation

Once fermentation is complete, dissolve the priming sugar in a small amount of boiling water and let it cool. Add this sugar solution to the fermented beer to carbonate it.

Prepare for Bottling

Using a sanitized siphon, transfer the beer into clean, sanitized bottles, leaving about an inch of headspace. Cap the bottles and store them in a cool, dark place for carbonation.

Bottle the Beer

After about 2 weeks of carbonation, chill the bottles in the refrigerator. Pour into a glass, savor your Mountain Pale Ale, and remember to pack it in and pack it out!
