Preparing the Pork Belly

Season the Pork Belly
Preheat your oven to 300°F (150°C). Cut the pork belly into 1-inch cubes. In a bowl, mix the salt, black pepper, and paprika. Rub the spice mixture all over the pork belly cubes.

Cook the Pork Belly
Place the seasoned pork belly cubes on a baking sheet lined with parchment paper. Bake in the preheated oven for about 2 hours, or until the pork is tender and the fat is rendered.
Making the Spicy Apricot Glaze

Combine Ingredients
In a saucepan over medium heat, combine the apricot jam, sriracha sauce, soy sauce, apple cider vinegar, minced garlic, minced ginger, and red pepper flakes.

Cook the Glaze
Stir the mixture until the jam has melted and the glaze is smooth. Allow it to simmer for about 5-7 minutes until it thickens slightly. Remove from heat and set aside.

Glaze the Pork Belly
Once the pork belly is cooked, remove it from the oven and increase the oven temperature to 400°F (200°C). Toss the pork belly cubes in the spicy apricot glaze until they are well coated.

Return the glazed pork belly to the oven and bake for an additional 10-15 minutes until the glaze caramelizes and the edges are crispy.
