Preparing the Chips

    Peel and Cut the Potatoes

    Peel the potatoes and cut them into thick strips, about 1/2 inch wide. Soak the potato strips in cold water for at least 30 minutes to remove excess starch.

    First Fry

    Heat oil in a deep fryer or a large pot to 325°F (160°C). Remove the potatoes from the water, pat them dry with a towel, and fry them in batches for about 5-6 minutes until they are soft but not browned. Drain on paper towels.

    Cool the Chips

    Let the fries cool while you prepare the fish. Increase the oil temperature to 375°F (190°C) for the second fry.

    Make the Batter

    In a large bowl, mix together the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer until the batter is smooth and slightly thick.

    Heat the Oil

    In a deep fryer or large pot, heat the oil to 375°F (190°C).

    Batter the Fish

    Dip each fish fillet into the batter, ensuring it is fully coated.

    Fry the Fish

    Carefully place the battered fish into the hot oil and fry for about 5-7 minutes, or until golden brown and crispy. Use a slotted spoon to remove the fish and drain on paper towels.

Final Frying the Chips

    Second Fry

    Once the fish is done, increase the oil temperature back to 375°F (190°C) and return the fries to the hot oil. Fry for an additional 2-3 minutes until they are golden brown and crispy.

    Season and Serve

    Remove the fries from the oil and drain on paper towels. Season with salt to taste. Serve the crispy fish and fries together, optionally with vinegar or tartar sauce on the side.
