Beef Brisket Preparation

Prepare the Brisket
Preheat your smoker to 225°F (107°C). Rub the beef brisket with smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Ensure that the brisket is evenly coated with the spice mixture.

Smoke the Brisket
Place the seasoned brisket in the smoker and smoke for approximately 6-8 hours, or until the internal temperature reaches 195°F (90°C). Baste periodically with beef broth to keep it moist.

Rest the Brisket
Once done, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.

After resting, slice the brisket against the grain into thin strips.

Make the Pickling Solution
In a small saucepan, combine white vinegar, sugar, and salt. Heat over medium until the sugar dissolves.

Warm the Tortillas
In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side, or until pliable.
