Brisket Preparation

    Prepare the Brisket

    Trim excess fat from the brisket and pat it dry with paper towels.

    Season the Brisket

    In a small bowl, combine salt, black pepper, paprika, garlic powder, onion powder, and brown sugar. Rub this mixture all over the brisket, making sure to cover all sides.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes, then drain. Preheat your smoker to 225°F (107°C).

    Smoke the Brisket

    Place the brisket on the smoker grates, fat side up. Add the drained wood chips to the smoker box or directly on the coals. Smoke for 1.5 hours per pound, or until the internal temperature reaches 195°F (90°C).

    Make the BBQ Sauce

    In a saucepan over medium heat, combine ketchup, apple cider vinegar, brown sugar, smoked paprika, garlic powder, onion powder, salt, and black pepper. Stir well and let it simmer for about 10-15 minutes until thickened.

Fries Preparation

    Prepare the Potatoes

    Wash and peel the potatoes. Cut them into thin strips for fries.

    Heat the Oil

    In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Carefully add the potato strips to the hot oil in batches. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels. Sprinkle with salt immediately.

Serving

    Slice and Serve

    Once the brisket reaches the desired internal temperature, remove it from the smoker and let it rest for at least 30 minutes before slicing. Serve topped with BBQ sauce alongside the fries.
