Seafood and Pasta
Method
Cooking Instructions
- 1
Prepare Seafood
In a medium pot, bring water to a boil. Add the clams and cover. Steam until the clams open, about 5-7 minutes. Remove from heat and set aside. In a separate pan, heat a tablespoon of olive oil over medium heat. Sear the salmon, rockfish, scallops, and shrimp until cooked through, about 3-4 minutes for each side. Remove from heat and set aside.
- 2
Cook Pasta
In the same pot of boiling water, add the gemelli pasta and cook according to package instructions until al dente, about 8-10 minutes. Reserve 1 cup of pasta water, then drain the pasta.
- 3
Make Lemon Pesto Cream Sauce
In a saucepan, combine 1 cup of heavy cream, 1/2 cup of lemon pesto, and half of the reserved pasta water. Heat over medium-low until warmed through. Stir in grated Parmesan cheese to taste.
- 4
Combine and Serve
In a large mixing bowl, combine the cooked pasta, seafood, steamed clams, and lemon pesto cream sauce. Toss well to coat. If the sauce is too thick, add more reserved pasta water until desired consistency is reached. Serve hot, garnished with extra Parmesan and fresh herbs if desired.
