    Preheat the Oven

    Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.

    Mix Dry Ingredients

    In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.

    Combine Wet Ingredients

    In another bowl, mix the sugar, eggs, vegetable oil, vanilla extract, and oatmeal stout until well combined.

    Combine Mixtures

    Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

    Fold in Remaining Ingredients

    Gently fold in the shredded carrots, chopped dried apricots, golden raisins, and chopped pecans.

    Bake the Cake

    Divide the batter evenly between the prepared cake pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Cool and Prepare Filling

    Allow the cakes to cool in the pans for 10 minutes, then transfer to wire racks to cool completely. Meanwhile, prepare the mascarpone filling.

    Make Mascarpone Filling

    In a bowl, whip together 1 cup of mascarpone cheese, 1/2 cup of powdered sugar, and 1 tsp of vanilla extract until smooth and creamy.

    Once the cakes are completely cool, place one layer on a serving platter, spread half of the mascarpone filling on top, then place the second layer on top and spread the remaining filling over the top.
