Prepare the Potatoes
Preheat the oven to 400°F (200°C). Wash and dice the potatoes into cubes. Toss them with olive oil, minced garlic, salt, and pepper. Spread them on a baking sheet and roast for 25-30 minutes until golden and crispy.

Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add diced onion and sliced fennel, sautéing until softened, about 5-7 minutes. Add spinach and grape tomatoes, cooking until the spinach wilts. Season with salt and pepper to taste, then set aside.

Wrap the Halibut
Take each halibut fillet and wrap it with 2 slices of prosciutto, covering the fish completely. Secure with toothpicks if necessary.

Sear the Halibut
In the same skillet, add another tablespoon of olive oil over medium-high heat. Sear the prosciutto-wrapped halibut for about 4-5 minutes on each side until the fish is cooked through and the prosciutto is crispy.

Make the Marsala Garlic Butter Sauce
In a small saucepan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes. Pour in the Marsala wine and bring to a simmer, cooking for an additional 3-4 minutes until slightly thickened.
