    In a large bowl, combine the New York strip steaks with the rosemary balsamic marinade. Ensure the steaks are evenly coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

    In a small bowl, mix softened unsalted butter with crumbled gorgonzola cheese until well combined. Form the mixture into a log shape using plastic wrap and refrigerate until firm.

    Preheat a grill or skillet over medium-high heat. Remove the steaks from the marinade and discard any excess. Grill the steaks for about 4-5 minutes on each side for medium-rare, or until desired doneness is reached.
