In a large bowl, combine the New York strip steaks with the rosemary balsamic marinade. Ensure the steaks are evenly coated. Cover and refrigerate for at least 1 hour, or up to overnight for maximum flavor.

In a small bowl, mix softened unsalted butter with crumbled gorgonzola cheese until well combined. Form the mixture into a log shape using plastic wrap and refrigerate until firm.

Prepare Patatine Fritte
While the steaks are cooking, fry or bake the patatine fritte according to package instructions until golden and crispy.

Plate the Dish
Once the steaks are done, let them rest for a few minutes. Slice the steaks and plate them with a generous dollop of gorgonzola butter on top. Drizzle with white truffle oil, and serve alongside the tomato chutney and patatine fritte.
