Prepare the Dough
In a large mixing bowl, combine the flour, yeast, and salt. Gradually add the water while mixing until a sticky dough forms.

Knead the Dough
Transfer the dough onto a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 2 hours, or until doubled in size.

Shape the Loaves
Once risen, gently punch down the dough and divide it into two equal pieces. Shape each piece into a rustic loaf.

Second Rise
Place the shaped loaves on a floured baking sheet, cover, and let rise for another hour.

Preheat Oven
Preheat your oven to 450°F (230°C) and place a baking stone or an inverted baking tray inside to heat up.

Bake the Bread
Transfer the loaves onto the hot baking stone/tray and bake for 20-25 minutes, until golden brown and hollow-sounding when tapped.

Cool
Remove from oven and let the ciabatta cool on a wire rack.
