Prepare the Chicken
Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.

Coat the Chicken
Set up a breading station: Place flour in one dish, beaten eggs in another, and breadcrumbs mixed with grated Parmesan in the third. Dip each chicken breast in flour, then in eggs, and finally coat with the breadcrumb mixture, pressing to adhere.

Fry the Chicken
In a large skillet, heat olive oil over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown. Transfer to a baking dish.

Assemble the Dish
Spoon housemade tomato sauce over each chicken breast, then top with slices of fresh mozzarella cheese.

Bake in the preheated oven for about 20 minutes, or until the chicken is cooked through and the cheese is bubbly.

While the chicken is baking, cook the spaghettini according to package instructions. Drain and set aside.
