Cashew Crusted Alaska Rockfish

Make the Cashew Crust
In a food processor, blend raw cashews until finely ground. Mix with panko breadcrumbs, salt, and pepper in a bowl.

Prepare the Fish
Preheat the oven to 375°F (190°C). Rinse the rockfish fillets and pat dry. Dip each fillet in the beaten egg, then coat with the cashew mixture.

Bake the Fish
Place the coated rockfish fillets on a baking sheet lined with parchment paper. Drizzle olive oil over the top. Bake for 15-20 minutes or until the fish is cooked through and the crust is golden.

Sauté the Vegetables
In a skillet, melt butter over medium heat. Add diced red bell pepper and seasonal vegetables. Sauté until tender, about 5-7 minutes.

Prepare the Sauce
In a small bowl, mix capers with a little olive oil and lemon juice (optional).

Serve
Plate the couscous, add sautéed vegetables, and top with cashew crusted rockfish. Drizzle caper sauce over the top and enjoy!
