Method

Preparation of Veal Cutlets

  1. 1

    Prepare the Cutlets

Preheat your oven to 375°F (190°C). Place veal cutlets between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet.

  2. 2

    Breading Setup

Set up a breading station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with grated Parmesan cheese.

Breading and Cooking

  1. 3

    Bread the Cutlets

Dredge each veal cutlet in flour, shaking off excess. Dip into the beaten eggs, then coat with the breadcrumb mixture, pressing firmly to adhere.

  2. 4

    Cook the Cutlets

In a large skillet, heat olive oil over medium heat. Add the breaded veal cutlets and cook for about 3-4 minutes on each side until golden brown and cooked through. Remove and set aside.

Making the Sauce

  1. 5

    Prepare the Tomato Sauce

In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add crushed tomatoes, oregano, salt, and pepper. Simmer for 10 minutes.

Assembling and Baking

  1. 6

    Assemble the Dish

In a baking dish, spread a layer of the tomato sauce, place the breaded veal cutlets on top, and cover each cutlet with more sauce. Sprinkle shredded mozzarella cheese on top of the cutlets.

  2. 7

    Bake

Bake in the preheated oven for 20-25 minutes, until the cheese is melted and bubbly.

  3. 8

    Garnish and Serve

Remove from the oven, garnish with chopped fresh basil, and serve hot.
