Method

Preparing the Herb Butter

  1. 1

    Make the Herb Butter

In a small bowl, combine the softened unsalted butter with chopped parsley, chopped thyme, and minced garlic. Mix well until all ingredients are fully incorporated.

  2. 2

    Chill the Herb Butter

Transfer the herb butter mixture onto a sheet of parchment paper. Roll it into a log shape and twist the ends to seal. Chill in the refrigerator for at least 30 minutes or until firm.

Cooking the Filet Mignon

  1. 3

    Season the Steaks

Take the filet mignon steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. Pat them dry with paper towels and season both sides generously with salt and black pepper.

  2. 4

    Preheat the Pan

Heat a large cast-iron skillet over medium-high heat. Add olive oil and allow it to heat until it shimmers but does not smoke.

  3. 5

    Sear the Steaks

Place the seasoned filet mignon steaks in the hot skillet. Sear for about 3-4 minutes on one side without moving them, allowing a golden crust to form.

  4. 6

    Flip and Cook

Flip the steaks using tongs and cook for an additional 3-4 minutes for medium-rare, or adjust cooking time to your preferred doneness.

  5. 7

    Rest the Steaks

Remove the steaks from the skillet and let them rest on a plate for 5 minutes to allow the juices to redistribute.

  6. 8

    Serve with Herb Butter

Slice the chilled herb butter into rounds and place a piece on top of each filet mignon steak just before serving.
