    Prepare the Pork

    In a large mixing bowl, combine the achiote paste, orange juice, minced garlic, and salt to form a marinade. Cut the pork shoulder into large chunks and coat them with the marinade. Marinate for at least 2 hours, preferably overnight in the refrigerator.

    Cook the Pork

    Preheat your oven to 300°F (150°C). Place the marinated pork in a Dutch oven or an oven-safe pot. Add bay leaves and cover the pot tightly with a lid or aluminum foil. Cook in the preheated oven for about 4 hours, or until the pork is tender and easily shredded.

    Prepare the Peppers and Onions

    While the pork is cooking, thinly slice the habanero peppers and onion. You can sauté them in a little bit of oil until they are soft, or you can serve them raw, depending on your preference.

    Assemble the Tacos

    Once the pork is done, remove it from the oven and shred it with two forks. Warm the corn tortillas in a pan or microwave. Fill each tortilla with a generous amount of shredded pork, top with sautéed or raw habanero peppers, onions, and fresh cilantro.

    Serve the tacos immediately with lime wedges on the side for extra flavor.
