Prepare the Marinade

    Make the Marinade

    In a blender, combine achiote paste, orange juice, garlic, cumin, and salt. Blend until smooth.

    Marinate the Pork

    Place pork shoulder in a large bowl or zip-top bag, pour marinade over the pork, and refrigerate for at least 4 hours or overnight.

Cook the Pork

    Roast the Pork

    Preheat the oven to 300°F (150°C). Place marinated pork in a roasting pan and cover with foil. Roast for 3-4 hours until tender.

    Remove pork from the oven, let cool slightly, then shred using two forks.

Grill the Pineapple

    While the pork is roasting, grill pineapple slices on medium heat until caramelized, about 3-4 minutes per side. Dice and set aside.

Make the Salsa

    In a bowl, combine smoked serrano peppers, diced tomatoes, diced onion, chopped cilantro, and lime juice. Mix well and set aside.

Assemble the Tacos

    Warm the Tortillas

    Warm corn tortillas in a skillet or directly over a flame until pliable.

    Fill each tortilla with shredded pork, grilled pineapple, chopped onion, and cilantro. Top with smoked serrano salsa.
