Prepare the Chips

    Cut the Potatoes

    Peel the russet potatoes and cut them into thick strips, about 1/4 to 1/2 inch thick.

    Soak the Potatoes

    Place the cut potatoes in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Dry the Potatoes

    Drain the potatoes and pat them dry with paper towels to remove any excess moisture.

    Fry the Potatoes (First Fry)

    In a large pot or deep fryer, heat 4 cups of vegetable oil to 325°F (160°C). Fry the potatoes in batches for about 3-4 minutes until they are soft but not colored. Remove and drain on paper towels.

Prepare the Fish

    Make the Batter

    In a mixing bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, 1 tsp of salt, and 1 tsp of black pepper. Gradually whisk in 1 cup of cold sparkling water until smooth.

    Heat the Oil

    In another large pot, heat 4 cups of vegetable oil to 350°F (175°C).

    Batter the Fish

    Dip each fish fillet into the batter, allowing any excess to drip off.

    Fry the Fish

    Carefully place the battered fish into the hot oil and fry for about 4-5 minutes, or until golden brown and crispy. Remove and drain on paper towels.

Finish the Chips

    Fry the Potatoes (Second Fry)

    Increase the oil temperature to 375°F (190°C). Fry the pre-cooked potatoes in batches for another 3-4 minutes until they are golden and crispy. Remove and drain on paper towels.

    Season the Chips

    Sprinkle the fried chips with salt to taste.

Serve

    Plate the Dish

    Serve the crispy battered fish alongside the golden fries. Enjoy with tartar sauce or malt vinegar, if desired.
