In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the cold beer or sparkling water until the batter is smooth and well combined.

Preheat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). You can test the oil by dropping a small amount of batter into it; it should sizzle and rise to the surface.

Coat the Fish
Dip each fish fillet into the batter, ensuring it is fully coated. Allow any excess batter to drip off before frying.

Fry the Fish
Carefully place the battered fish fillets into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and crispy. Remove from the oil and drain on paper towels.

Prepare the Potatoes
Peel the potatoes and cut them into fries, about 1/4 inch thick. Rinse them under cold water to remove excess starch, then pat them dry with paper towels.

In a separate deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Carefully add the prepared fries to the hot oil in batches, ensuring not to overcrowd the pan. Fry for about 5-7 minutes or until golden and crispy. Remove from the oil and drain on paper towels, then season with salt.
