Preparing the Fries

Cook the Fries
Preheat the vegetable oil in a deep fryer or large pot to 180°C (350°F). Add the frozen French fries in batches and fry until golden and crispy, about 4-5 minutes. Remove and drain on paper towels.

Season the Fries
While the fries are still hot, sprinkle with salt to taste. Set aside.
Making the Chili

Cook the Ground Beef
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, about 5-7 minutes.

Add Remaining Ingredients
Stir in the canned kidney beans (drained), canned diced tomatoes, chili powder, ground cumin, salt, black pepper, and water. Bring to a simmer.

Simmer the Chili
Reduce the heat and let the chili simmer for 15-20 minutes, stirring occasionally until it thickens slightly.
Assembling the Chili Cheese Fries

Layer the Fries
On a serving platter, arrange the crispy fries in an even layer.

Spoon the hot chili mixture generously over the fries.

Sprinkle shredded cheddar cheese over the chili while it's still hot, allowing it to melt.

Garnish with a dollop of sour cream and chopped green onions. Serve immediately while hot.
