Prepare the Ingredients
Chop the heirloom tomatoes into small pieces and set aside. If not already done, chop the bacon into small pieces and cook it in a skillet until crispy. Remove and drain on paper towels.

Cook the Omelet
In a non-stick skillet, heat the olive oil over medium heat. Pour in the beaten eggs and let them cook for a minute to set the bottom.

Add the Fillings
Once the edges start to lift, gently lift the edges with a spatula and allow uncooked egg to flow underneath. Add the chopped heirloom tomatoes, marinated mozzarella, goat cheese, and crispy bacon on one half of the omelet.

Fold and Serve
Once the cheese begins to melt, fold the omelet in half over the fillings. Cook for another minute, then slide onto a plate. Serve warm with tomato jam on the side.
