Prepare the Mojo Marinade
In a blender, combine garlic, orange juice, lime juice, olive oil, cumin, oregano, salt, and pepper. Blend until smooth.

Marinate the Pork
Place the pork shoulder in a large resealable bag or dish. Pour the mojo marinade over the pork, ensuring it is well coated. Seal and refrigerate for at least 4 hours, preferably overnight.

Cook the Pork
Preheat your oven to 300°F (150°C). Remove the pork from the marinade and place it in a roasting pan. Roast for about 3-4 hours, or until the pork is tender and easily shredded.

Assemble the Cuban Sandwich
Slice the roasted pork and layer it on a Cuban bread or sandwich roll. Add slices of smoked ham, house pickles, and a generous spread of digonnaise. Top with the other half of the bread.

Grill the Sandwich
Heat a panini press or skillet over medium heat. Grill the sandwich until golden brown and crispy on the outside, about 3-4 minutes per side.

Slice the sandwich in half and serve hot with extra pickles on the side.
