Prepare the Gelatin
Soak the gelatin sheets in cold water for about 5 minutes until softened. Then, squeeze out excess water and dissolve in a small saucepan over low heat, stirring until completely melted. Remove from heat and set aside.

Make the Dark Chocolate Mousse
Melt the dark chocolate in a heatproof bowl over simmering water, stirring until smooth. Let it cool slightly. Whip 200 ml of heavy cream until soft peaks form. In a separate bowl, beat 2 egg whites until foamy, then gradually add 50g of granulated sugar and continue beating until stiff peaks form. Gently fold the melted chocolate into the whipped cream, then fold in the egg whites. Finally, add the dissolved gelatin, mix well, and spoon into serving glasses. Refrigerate for at least 2 hours.

Make the White Chocolate Mousse
Repeat the process for the white chocolate mousse: melt the white chocolate, let it cool slightly, whip the remaining 200 ml of heavy cream until soft peaks form, and beat the remaining 2 egg whites with 50g of sugar until stiff peaks form. Fold together the whipped cream and chocolate, then fold in the egg whites and the gelatin. Spoon it on top of the dark chocolate mousse in the glasses and refrigerate for another 2 hours.

Prepare the Cherry Jelly
In a saucepan, heat the cherry juice until just starting to simmer. Add the remaining gelatin (soaked and melted) into the cherry juice, stirring until well combined. Allow it to cool slightly, then pour it over the set mousse layers. Return to the fridge until the jelly is set, about 1 hour.

Serve the Mousse
Once the mousse is set and the jelly is firm, garnish with fresh cherries and chocolate straws before serving.
