Place the finely chopped bittersweet chocolate in a medium heatproof bowl and set aside.

In a small saucepan, combine 1 cup heavy cream and 1 tsp light corn syrup (or honey). Heat over medium until it just reaches a simmer (small bubbles at the edges), about 3–4 minutes; do not boil.

Make the ganache
Pour the hot cream over the chopped chocolate. Let sit for 1 minute, then gently stir from the center outward until smooth and glossy. Add 2 tbsp unsalted butter and 1 tsp fine sea salt; stir until incorporated. If the chocolate isn't fully melted, place the bowl over a barely simmering water bath and stir until smooth. Cover with plastic wrap touching the surface and chill in the refrigerator until firm enough to scoop, about 1–2 hours.

Form and coat
Using a small melon baller or teaspoon, scoop 1-inch portions of the chilled ganache. Quickly roll between lightly greased palms to form smooth spheres. Place on a parchment-lined tray and freeze for 10–15 minutes to firm up (this keeps them neat when coating). Roll the truffles in the unsweetened cocoa powder until evenly coated. Transfer to an airtight container and chill until serving.

Prepare chocolate and caramel
Place the chopped milk chocolate in a heatproof bowl. If using caramel candies, chop them small so they melt easily.

Heat 3/4 cup heavy cream in a small saucepan until it begins to steam and small bubbles form at the edges (do not boil). Pour the hot cream over the milk chocolate. Let sit 1 minute, then stir until smooth. Add 1 tbsp unsalted butter and 6 tbsp chopped soft caramel; stir until the caramel is fully melted and the mixture is glossy. If needed, warm briefly over a double boiler to incorporate.

Cover the ganache with plastic wrap touching the surface and chill until firm enough to scoop, about 1–1.5 hours. Scoop 1-inch balls, roll quickly between hands to smooth, and place on a parchment-lined tray. For a defined caramel center, you can pipe a small amount of extra cooled caramel into an indentation made in each ball and reseal with a little ganache.

White Chocolate-Raspberry Truffles

Put the chopped white chocolate in a medium heatproof bowl. Measure the freeze-dried raspberry powder and raspberry jam.

Heat 1/2 cup heavy cream in a small saucepan until steaming (do not boil). Pour over the white chocolate and let sit 1 minute. Stir gently until smooth and glossy. Add 1 tbsp unsalted butter and 2 tbsp raspberry jam; stir until fully incorporated. Stir in 2 tbsp freeze-dried raspberry powder for extra color and tartness.
