Prepare and roast eggplants

Preheat oven to 425°F (220°C). Prick the eggplants a few times with a fork, place on a rimmed baking sheet lined with foil, and roast until very soft and slightly charred, 30–40 minutes depending on size. Remove and let cool. When cool enough to handle, peel and scoop flesh into a blender or food processor; you should have about 1 to 1 1/4 cups of puréed eggplant. Set aside.

Infuse milk and cream

Split the vanilla bean lengthwise and scrape seeds into a medium saucepan; add the pod as well. Combine whole milk, heavy cream, and 2 tablespoons of the granulated sugar with the vanilla in the saucepan. Warm over medium heat until just below simmer (steaming, small bubbles at edge), stirring occasionally. Remove from heat, cover, and let steep for 20 minutes to concentrate flavor. If using vanilla extract, add it later with the egg yolks.

Make egg yolk custard base (crème anglaise)

In a bowl, whisk together the egg yolks and remaining 1 tablespoon granulated sugar and invert sugar until slightly thickened and pale. Reheat the milk/cream to a gentle simmer again. Slowly temper 1/3 cup of the hot milk into the yolks while whisking constantly, then gradually whisk the yolk mixture back into the remaining milk on low heat. Cook gently, stirring constantly with a wooden spoon or heatproof spatula, until the mixture coats the back of the spoon and reaches about 170–175°F (77–80°C) — do not boil or scramble the eggs.

Combine custard and eggplant purée

Remove the custard from heat and immediately strain it through a fine-mesh sieve into a clean bowl to remove the vanilla pod and any coagulated bits. Stir in the puréed roasted eggplant and fine sea salt until smooth and homogeneous. Use an immersion blender for a minute if needed to ensure fully integrated, silky texture.

Chill the base

Cool the mixture quickly by placing the bowl in an ice bath and stirring occasionally until it reaches refrigerator temperature. Cover and refrigerate at least 4 hours or overnight to mature flavors and fully chill.

Churn and freeze

Strain the chilled mixture again if any remaining fibers remain. Churn in an ice cream maker according to manufacturer’s instructions until it reaches soft-serve consistency (typically 20–30 minutes). Transfer to a freezer-safe container, press a piece of plastic wrap directly onto the surface to minimize ice crystals, and freeze at least 4 hours (preferably overnight) until firm.

Brown Cardamom Foam (Topping)

Make cardamom infusion

Crush the brown cardamom pods lightly to expose the seeds. In a small saucepan combine the crushed pods, water, and light brown sugar. Bring to a gentle simmer over medium heat, then reduce heat and simmer for 10 minutes to extract smoky, camphor-like notes. Remove from heat and let steep for an additional 10 minutes. Strain through a fine mesh sieve, pressing the solids to extract as much liquid as possible. You should have about 3/4 to 1 cup of infused syrupy liquid.

Concentrate and season

If the infusion seems weak, return to the pan and simmer gently until reduced to about 1/2 cup, concentrating flavor. Stir in the lemon juice and salt; the acid brightens the foam. Taste and adjust sweetness with a little extra brown sugar if needed. Allow the syrup to cool to room temperature, then chill in the fridge until very cold (at least 1 hour).

Prepare foam using lecithin

Once cold, place the chilled cardamom liquid in a wide shallow bowl. Add soy lecithin powder and (optionally) the neutral oil. Whisk briskly by hand or use an immersion blender with the blade raised to incorporate air for about 30–60 seconds until a stable foam forms on the surface. Let foam rest for 1–2 minutes to stabilize. If using a hand blender, hold it just below the surface and pulse to create microfoam. Keep the foam chilled until service; re-whisk briefly if it collapses slightly.

Finish & Assembly

Scoop the frozen Japanese eggplant ice cream into chilled bowls or small serving cups. Using a large spoon, gently spoon a generous dollop of the brown cardamom foam on top of each scoop (foam will be delicate; place it last). Sprinkle with a pinch of toasted sesame seeds and garnish with micro basil or shiso leaves if using.

Serve immediately. If the foam loses height, whisk it again briefly; if the ice cream is too hard from the freezer, let it sit 5 minutes at room temperature before scooping.
