    Chill serving dish

    Place the tin or jar of caviar in a bowl of ice or an ice-filled serving dish at least 15–20 minutes before serving to bring it thoroughly cold. Keep caviar refrigerated until ready to plate; avoid metal spoons—use mother-of-pearl, bone, or plastic spoons.

    If using boiled new potatoes, cool them completely in the refrigerator until serving. Toast brioche or warm blinis briefly in a dry skillet or oven (low heat) then cool slightly so they are warm, not hot.

Prepare accompaniments

    Warm unsalted butter in a small skillet over low heat until melted and foamy. Brush a light coating on the toasted brioche slices or on blinis to add richness. Keep butter warm but not hot.

    Divide creme fraiche into small serving bowls (about 1 tablespoon per person). Fold in the finely chopped shallot and half of the chopped chives into the creme fraiche, then season very lightly with sea salt flakes and a few turns of freshly cracked black pepper. Taste — remember the caviar is salty, so keep the creme fraiche only mildly seasoned.

Plate caviar

    Using a non-metal spoon, gently transfer the chilled caviar to a small chilled serving bowl or the center of the plate. Do not press or mash—scooping gently preserves the pearls’ shape and texture. Portion about 1 oz per serving if serving several guests (4 oz total in recipe yields 4 servings).

    Arrange accompaniments around the caviar bowl: blinis or crackers, buttered brioche, potato halves, and small bowls of shallot-creme fraiche. Place the remaining chopped chives and the capers (if using) in tiny spoons or ramekins for guests to add themselves.

    Cut the lemon in half and provide one half sliced into thin wedges. Place microgreens or dill tips nearby for optional garnish.

Service & tasting

    To taste: using a mother-of-pearl or bone spoon, place a small dollop of creme fraiche on a blini or cracker, add a small spoonful (about 1/2–1 tsp) of caviar on top, finish with a few chives and a squeeze of lemon if desired. Alternatively, spoon a small amount of caviar onto a buttered brioche or a halved chilled potato for a traditional presentation.

    Encourage guests to taste the caviar alone first to appreciate its flavor and texture, then with the accompaniments. Serve immediately while caviar is cold; keep the tin on ice during service to maintain temperature. Accompany with chilled vodka or Champagne if desired.

    After serving, reseal unused caviar and store it in the coldest part of the refrigerator. Consume within manufacturer-recommended timeframe (usually a few days) and avoid freezing.
